Baked potatoes

Air Fryer Twice-Baked Potatoes.

Ingredients:

– 2 large russet potatoes
– 1-2 tablespoons of olive oil
– Salt and pepper, to taste
– 1/4 cup sour cream
– 2 tablespoons butter, softened
– 1/4 cup shredded cheese (cheddar or your preference)
– 2 tablespoons cooked bacon bits (optional)
– 1 green onion, chopped (for garnish)

Instructions:

1. Prepare the Potatoes: Clean and dry the potatoes thoroughly. Coat them with olive oil, season with salt, and pierce the skin with a fork.

2. First Baking: Place the potatoes in the air fryer basket and cook at 400°F (200°C) for 35-40 minutes, or until they are tender.

3. Scoop the Flesh: Once cooled slightly, cut the potatoes in half lengthwise and carefully scoop out the flesh, leaving a thin layer of potato inside the skins.

4. Prepare the Filling: In a mixing bowl, mash the scooped-out potato. Incorporate sour cream, butter, cheese, and bacon bits (if desired). Season with salt and pepper, mixing until the mixture is creamy.

5. Second Baking: Fill the potato skins with the prepared mixture. Return them to the air fryer and cook at 350°F (175°C) for 5-7 minutes, or until they are heated through and golden.

6. Garnish and Serve: Sprinkle with chopped green onions and additional cheese if preferred. Enjoy your meal!
