Garlic Parmesan Chicken Meatloaf
Ingredients:
For the meatloaf:
1 lb ground chicken
1 cup breadcrumbs (either panko or regular)
1/3 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
1 egg
2 cloves garlic, minced
1/4 cup milk
1 tsp Italian seasoning
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
For the topping:
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs
1 tbsp olive oil
1 clove garlic, minced
1 tbsp chopped parsley (optional)
Instructions:
1. Preheat the Oven: Begin by preheating your oven to 375°F (190°C). Prepare a loaf pan by greasing it or lining it with parchment paper.
2. Combine the Meatloaf Ingredients: In a large mixing bowl, combine all the ingredients for the meatloaf. Stir gently until just mixed, taking care not to overmix to maintain a tender texture.
3. Form the Loaf: Transfer the mixture into the prepared loaf pan, shaping it evenly.
4. Prepare the Topping: In a separate small bowl, combine the Parmesan cheese, breadcrumbs, olive oil, and minced garlic. Evenly distribute this mixture over the top of the meatloaf.
5. Bake: Place the meatloaf in the oven and bake for 35 to 40 minutes, or until the internal temperature reaches 165°F (74°C).
6. Optional Broiling: For an added crispy texture, broil the meatloaf for an additional 2 to 3 minutes after baking.
7. Cool and Serve: Allow the meatloaf to rest for 5 to 10 minutes before slicing. If desired, garnish with chopped parsley.
