Italian-Style Pot Roast!
Ingredients
3 lbs beef chuck roast
Salt and pepper, to taste
2 tbsp olive oil
1 large onion, diced
4 cloves garlic, minced
1 can (14.5 oz) diced tomatoes
1 cup beef broth
1/2 cup red wine (optional)
2 tbsp tomato paste
1 tsp dried rosemary
1 tsp dried thyme
1 tsp dried oregano
1/2 tsp crushed red pepper flakes (optional, for a bit of heat)
1/2 cup sliced mushrooms
2 large carrots, cut into chunks
1 bell pepper, sliced
Fresh basil or parsley, for garnish
Instructions
1. Prep the Meat: Season the roast generously with salt and pepper.
2. Sear the Meat: In a large pot or Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned. Remove from the pot and set aside.
3. Cook the Vegetables: In the same pot, add the onions and garlic. Sauté until softened, about 3-4 minutes.
4. Add Liquids and Seasonings: Stir in the diced tomatoes, beef broth, red wine (if using), and tomato paste. Add rosemary, thyme, oregano, and red pepper flakes. Stir well.
5. Combine Everything: Return the roast to the pot. Add mushrooms, carrots, and bell pepper around the roast.
6. Simmer: Cover and reduce heat to low. Simmer for 3-4 hours, or until the meat is tender and shreds easily. Alternatively, you can cook it in a preheated oven at 325°F for about 3 hours.
7. Serve: Garnish with fresh basil or parsley, and serve with pasta, mashed potatoes, or crusty bread to soak up the delicious sauce.
