Cowboy Stew with Potatoes and Meatloaf
Ingredients
1 lb ground beef
1 lb ground pork sausage
1 onion, chopped
4-5 medium potatoes, diced
1 can (15 oz) pinto beans, drained
1 can (15 oz) kidney beans, drained
1 can (15 oz) diced tomatoes
1 can (10 oz) diced tomatoes with green chilies
1 can (15 oz) corn, drained
4 cups beef broth (adjust for desired consistency)
1 packet taco seasoning
Salt and pepper to taste
Optional: shredded cheese, sour cream, green onions, or chopped cilantro for garnish
Instructions
1. Cook the Meat: In a large pot or Dutch oven, brown the ground beef and sausage over medium heat until fully cooked. Drain any excess fat.
2. Add Onion: Add the chopped onion to the meat mixture and cook for about 5 minutes until softened.
3. Add Potatoes: Stir in the diced potatoes and cook for another 5-7 minutes, allowing them to soften slightly.
4. Add Remaining Ingredients: Add pinto beans, kidney beans, diced tomatoes, tomatoes with green chilies, corn, beef broth, and taco seasoning. Stir well to combine.
5. Simmer: Bring the stew to a boil, then reduce the heat and let it simmer for about 30-40 minutes or until the potatoes are tender. Stir occasionally and add more beef broth if needed for your desired consistency.
6. Season: Taste and adjust seasoning with salt and pepper as needed.
7. Serve: Ladle into bowls and garnish with shredded cheese, sour cream, green onions, or cilantro, if desired.
