Peanut Butter Balls with Chocolate Rice Krispies are just like your favorite Peanut Butter Balls but with a crispy filling thanks to the rice krispies. This delicious candy is great for the holidays and cookie trays! Truly, the perfect combination of sweet and salty. A must make for Christmas!

Ingredients:

1 cup creamy peanut butter

1/4 cup unsalted butter, softened

2 cups powdered sugar

2 teaspoons vanilla extract

2 cups Rice Krispies cereal

10 oz semisweet chocolate chips (or milk chocolate if preferred)

1 tablespoon coconut oil or shortening (optional, for smooth chocolate)

Instructions:

1. Mix the Peanut Butter Base:
In a large bowl, mix together the peanut butter, softened butter, and vanilla extract until smooth. Slowly add in the powdered sugar, stirring until fully combined.

2. Add Rice Krispies:
Gently fold in the Rice Krispies cereal until the mixture is well combined and the cereal is evenly distributed.

3. Shape the Balls:
Using your hands or a small cookie scoop, form the mixture into 1-inch balls. Place the balls on a lined baking sheet (with parchment paper) and refrigerate for about 30 minutes to firm up.

4. Melt the Chocolate:
While the peanut butter balls are chilling, melt the chocolate chips and coconut oil (if using) in a microwave-safe bowl. Heat in 20-30 second intervals, stirring in between, until smooth.

5. Dip the Balls in Chocolate:
Once the peanut butter balls are firm, dip each ball halfway into the melted chocolate, allowing the excess to drip off. You can use a fork or toothpick to help with dipping. Place them back on the parchment paper.

6. Set the Chocolate:
Return the dipped peanut butter balls to the refrigerator for about 15-20 minutes to allow the chocolate to harden.

7. Serve:
Once set, the Peanut Butter Chocolate Rice Krispies Balls are ready to serve! Store them in an airtight container in the fridge for up to a week.

Tips:

If you prefer them fully coated in chocolate, you can dip the entire ball in chocolate instead of just halfway.

For added decoration, drizzle extra chocolate over the top or sprinkle with sea salt before the chocolate hardens.
