Grilled Lemon-Oregano Chicken

Ingredients:

2 boneless chicken breasts

1/4 cup olive oil

Juice of 2 lemons

2 cloves garlic, minced

1 tablespoon dried oregano

Salt and pepper to taste

Instructions:

1. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper.

2. Add chicken breasts and marinate for at least 30 minutes (or up to 2 hours in the fridge).

3. Preheat a grill or grill pan over medium-high heat.

4. Grill the chicken for 6-7 minutes on each side, or until fully cooked.

5. Let it rest for a few minutes before slicing.

Tzatziki Sauce

Ingredients:

1 cup Greek yogurt

1 cucumber, grated and excess moisture squeezed out

1 clove garlic, minced

1 tablespoon olive oil

1 tablespoon fresh dill (or mint)

Salt to taste

Instructions:

1. In a bowl, combine yogurt, cucumber, garlic, olive oil, dill, and salt.

2. Mix well and refrigerate until serving.

Greek Salad

Ingredients:

2 cups mixed greens

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, thinly sliced

1/2 cup Kalamata olives

1/2 cup feta cheese, crumbled

Olive oil, lemon juice, salt, and pepper for dressing

Instructions:

1. In a large bowl, combine greens, tomatoes, cucumber, onion, olives, and feta.

2. Drizzle with olive oil and lemon juice, then season with salt and pepper. Toss gently.

Serving

Plate the grilled chicken alongside the tzatziki and Greek salad. Set the table with candles and enjoy a lovely, romantic meal!
