Beef stew
Ingredients:
– 2 tablespoons of olive oil
– 2 pounds of cubed beef stew meat
– 2 tablespoons of all-purpose flour
– 4 cups of water
– 2 cups of beef broth
– 1/2 teaspoon of salt
– 1/2 teaspoon of ground black pepper
– 4 cups of cubed potatoes
– 2 cups of chopped carrots
– 1 teaspoon of dried rosemary
– 1 cup of fresh corn kernels
– 1 cup of fresh green beans, cut into 1-inch pieces
– 1 cup of chopped turnip (optional)
– 2 cups of chopped fresh tomatoes
Instructions:
1. In a large pot or Dutch oven, heat the olive oil over medium-high heat.
2. Add the cubed beef stew meat and brown it on all sides. This should take about 5-7 minutes.
3. Sprinkle the flour over the browned meat and stir well to coat. Cook for an additional 2 minutes to remove the raw flour taste.
4. Pour in the water and beef broth, stirring to combine. This will create the base of your stew.
