Cheesy Spanish Rice Bake
An economical dish that provides meals for several days!
Ingredients:
– 1 box of Rice-A-Roni Spanish Rice (prepared as per package instructions)
– 1 lb of lean ground beef
– 1 small onion, diced
– ½ red bell pepper, diced
– ½ green bell pepper, diced
– 1 can (10 oz) Rotel (diced tomatoes and green chilies), drained
– 1 cup of shredded sharp cheddar cheese, divided
– ½ teaspoon salt
– ½ teaspoon black pepper
– ½ teaspoon cumin
Instructions:
1. Preheat the oven to 350°F (175°C).
2. Prepare the Rice-A-Roni according to the instructions on the box and set it aside.
3. In a large skillet over medium heat, brown the ground beef. Add the diced onion, red bell pepper, and green bell pepper, cooking until the beef is browned and the vegetables are tender. Drain any excess fat.
4. Season the mixture with salt, black pepper, and cumin. Stir in the drained Rotel and ½ cup of the shredded cheese.
5. Mix the meat mixture with the prepared Spanish rice thoroughly, then transfer it to a greased baking dish.
6. Sprinkle the remaining ½ cup of shredded cheddar cheese on top.
7. Bake uncovered for 25-30 minutes, or until the cheese is melted and bubbly.
8. Allow to rest for 5 minutes before serving.
