Cajun Pasta Delight

Ingredients
– 8 oz. shrimp, peeled and deveined
– 2 large chicken breasts, cut into pieces
– 2 links of andouille sausage, sliced
– 6 tbsp. butter, divided
– 3 tbsp. Cajun seasoning, divided
– 1 tsp. ground thyme
– 1 onion, chopped
– 1 bell pepper, chopped
– 1 lb. linguini, cooked and drained
– ⅓ cup reserved pasta cooking liquid
– 1 cup heavy whipping cream
– 1 can diced tomatoes
– 2 tsp. minced garlic
– Salt and pepper to taste

Instructions
1. In a skillet over medium-high heat, melt 2 tbsp. of butter and sauté the shrimp with 1 tbsp. of Cajun seasoning until fully cooked. Remove from the skillet and set aside.
2. Add the sliced sausage to the skillet and cook until browned. Remove and set aside.
3. In the same skillet, melt 2 tbsp. of butter and sauté the chicken pieces with 1 tbsp. of Cajun seasoning until cooked through. Remove and set aside.
4. Add the remaining 2 tbsp. of butter to the skillet and sauté the chopped onions and bell peppers over medium heat until they soften.
5. Stir in the minced garlic and reserved pasta cooking liquid, sautéing for an additional 30 seconds.
6. Incorporate the heavy whipping cream, diced tomatoes, ground thyme, and season with salt and pepper to taste. Allow the sauce to simmer until it thickens.
7. Return the cooked meats to the skillet along with the linguini. Toss to combine thoroughly and serve.
