Pineapple Quick Bread
Ingredients:
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 teaspoon salt
– 3 ounces cream cheese, softened
– 1 cup granulated sugar
– 3 teaspoons vanilla extract
– 1 large egg, beaten
– 1/2 cup sour cream
– 1 can (20 ounces) crushed pineapple, drained (reserve 2-3 tablespoons of juice for the glaze)
Glaze:
– 1 1/2 cups powdered sugar
– 2-3 tablespoons reserved pineapple juice
Instructions:
1. Preheat the oven to 350°F and lightly grease a bread pan.
2. In a medium mixing bowl, whisk together the flour, baking soda, and salt. In another bowl, combine the beaten egg, sugar, cream cheese, and vanilla extract, mixing until smooth.
3. Gradually add the dry ingredients to the cream cheese mixture, stirring until just combined. Then, incorporate the sour cream and gently fold in the crushed pineapple.
4. Transfer the batter to the prepared bread pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow the bread to cool in the pan for 15-20 minutes before transferring it to a wire rack to cool completely.
5. For the glaze, combine the powdered sugar with the reserved pineapple juice and drizzle it over the cooled bread.
