Crockpot kielbasa

Crockpot Kielbasa and Cheddar Pierogi Casserole

Ingredients:
– 3 packages of Mrs. T’s Cheddar Pierogies
– 4 cups of chicken broth, divided
– 8 oz of cream cheese
– 1 cup of shredded cheddar cheese, plus extra for garnish
– 1 lb of kielbasa, sliced
– Salt and pepper, to taste

Instructions:
Prepare the Crockpot: In a 4-6 quart crockpot, combine three cups of chicken broth with the frozen pierogies, sliced kielbasa, and one cup of shredded cheddar cheese. Mix well to ensure even distribution of the ingredients.
Cooking Process: Set the crockpot to high and let it cook for 3-4 hours, or opt for the low setting for 6 hours. This will allow the flavors to blend beautifully.
Incorporate Cream Cheese: Approximately 30 minutes before the casserole is finished, warm the cream cheese with the remaining cup of chicken broth. This can be achieved in a microwave or on the stovetop. Whisk until the mixture is smooth.
Combine and Complete Cooking: Add the cream cheese mixture to the crockpot, stirring to integrate. Sprinkle additional shredded cheddar cheese on top. Cover and continue cooking on low for another 30 minutes, or until the cheese is melted and bubbly.
Serve: Spoon out the hot casserole, optionally garnished with sliced green onions for an extra touch of color and flavor.
