Ingredients:

1 ½ cups all-purpose flour

3 ½ teaspoons baking powder

1 teaspoon salt

1 tablespoon granulated sugar

1 ¼ cups milk

1 egg

3 tablespoons unsalted butter, melted

1 teaspoon vanilla extract (optional)

Instructions:

1. Combine Dry Ingredients: In a large bowl, sift together the flour, baking powder, salt, and sugar.

2. Incorporate Wet Ingredients: Create a well in the center of the dry mixture and add the milk, egg, melted butter, and vanilla (if desired). Mix until just blended; it is acceptable for the batter to remain slightly lumpy.

3. Preheat Cooking Surface: Heat a lightly greased griddle or nonstick skillet over medium heat. The surface is ready when a drop of water sizzles and evaporates quickly.

4. Cook Pancakes: Pour ¼ cup of batter onto the griddle for each pancake. Cook until bubbles appear on the surface and the edges appear set, approximately 2-3 minutes. Flip and cook for an additional 1-2 minutes until golden brown.
