Crock Pot Chicken Thighs
Cooking chicken thighs in a crock pot results in a delectable dish that is ideal for hectic weeknights or leisurely weekends. The chicken remains juicy and is enveloped in a thick, flavorful sauce made with garlic, honey, and soy sauce, making it a favorite for slow cooking.

Ingredients:
– 8 bone-in, skin-on chicken thighs
– 1 tablespoon olive oil
– Salt and pepper to taste
– 3/4 cup ketchup
– 1/3 cup soy sauce
– 1/3 cup honey
– 3 tablespoons minced garlic
– 1/2 teaspoon onion powder
– 1/4 teaspoon dried thyme
– 1 teaspoon dried parsley
– 1/4 teaspoon dried mustard
– 2 tablespoons fresh chopped parsley (optional)

Instructions:
Begin by heating olive oil in a cast-iron skillet or a heavy-bottomed pan. Season the chicken with salt and pepper, then sear it skin-side down until it achieves a golden color. After searing, transfer the chicken to the crock pot, placing it skin-side up.

In a medium bowl, combine ketchup, soy sauce, honey, garlic, onion powder, dried thyme, dried parsley, and dried mustard. Whisk the ingredients together and pour the mixture over the chicken.

Cover the crock pot and cook on HIGH for 3 hours or LOW for 5 hours, until the chicken is fully cooked and the sauce has thickened.

Once done, remove the chicken and arrange it on a serving platter. Drizzle the sauce from the bottom of the crock pot over the chicken, garnish with fresh parsley, and serve.
