Walking Taco Casserole

Ingredients:

– 1 lb ground beef (or ground turkey)
– 1 packet taco seasoning mix
– 1/2 cup water
– 1 can (15 oz) black beans, drained and rinsed
– 1 cup salsa (choose your preferred spice level)
– 2 cups shredded cheddar cheese (or a Mexican blend)
– 3 cups corn chips (such as Fritos or Doritos)
– 1 cup chopped lettuce
– 1 cup diced tomatoes
– 1/4 cup sliced black olives (optional)
– 1/4 cup diced red onion (optional)
– Sour cream, guacamole, and/or taco sauce for serving (optional)

Instructions:

1. Preheat the Oven: Begin by setting your oven to 350°F (175°C).

2. Cook the Meat: In a large skillet over medium heat, brown the ground beef, breaking it apart as it cooks. Drain any excess fat.

3. Season the Meat: Add the taco seasoning and water to the skillet. Allow it to simmer for 2-3 minutes until the seasoning is well mixed and the liquid is mostly absorbed.

4. Assemble the Casserole: In a 9×13 baking dish, spread half of the corn chips evenly across the bottom. Layer the seasoned ground beef on top, followed by the black beans and salsa. Finish with a generous sprinkle of shredded cheese.

5. Bake: Place the dish in the preheated oven and bake for 15-20 minutes, or until the cheese is melted and bubbly.

6. Add Toppings: Once baked, remove the casserole from the oven and let it cool slightly. Top with chopped lettuce, diced tomatoes, black olives, and red onion.

7. Serve: Dish out portions and serve with sour cream, guacamole, or taco sauce. Include extra corn chips on the side for added crunch!
