KFC-style Original Secret Fried Chicken

Ingredients:

– 1 whole chicken, cut into 8 pieces
– 3 beaten eggs
– 2 cups all-purpose flour
– 4 teaspoons paprika
– 2 teaspoons white pepper
– 2 teaspoons garlic powder
– 1 teaspoon ground ginger
– 1 teaspoon celery salt
– 1 teaspoon dried oregano
– 1 teaspoon dried basil
– 1 teaspoon dried thyme
– 1 teaspoon mustard powder
– 1/2 teaspoon black pepper
– 1/2 teaspoon salt
– Oil for frying (such as vegetable or canola)

Instructions:

1. Prepare the Chicken:

Rinse the chicken pieces and dry them thoroughly with paper towels. Season lightly with salt and pepper.

2. Create the Seasoned Flour Mixture:

In a mixing bowl, combine the flour, paprika, white pepper, garlic powder, ground ginger, celery salt, oregano, basil, thyme, mustard powder, black pepper, and salt. Stir until well blended.

3. Set Up the Coating Station:

Arrange the seasoned flour in one bowl and the beaten eggs in another.

4. Coat the Chicken:

Dip each piece of chicken into the egg mixture, ensuring it is fully coated. Then, dredge it in the seasoned flour, pressing down to ensure an even coating. For a thicker crust, repeat the egg and flour process.

5. Allow the Coating to Set:

Place the coated chicken on a wire rack and let it rest for 15 to 20 minutes. This step helps the coating adhere better during frying.

6. Fry the Chicken:

Heat oil in a deep fryer or large skillet to 350°F (175°C), ensuring there is enough oil to fully submerge the chicken. Fry the chicken pieces in batches for 12 to 15 minutes, turning occasionally, until they are golden brown and cooked through, reaching an internal temperature of 165°F (74°C).

7. Drain and Serve:

Remove the chicken from the oil and let it drain on a plate lined with paper towels or a wire rack. Serve hot alongside your favorite sides, such as mashed potatoes, coleslaw, or biscuits.
