Fried rice
Garlic Chicken Fried Rice:
Ingredients:
– 2 cups of cooked white rice (preferably chilled overnight)
– 2 diced chicken breasts
– 2 cloves of minced garlic
– 2 tablespoons of soy sauce
– 1 tablespoon of sesame oil (or any preferred cooking oil)
– 2 beaten eggs
– 1/2 cup of frozen peas and carrots (optional)
– Chopped green onions for garnish
– Salt and pepper to taste

Instructions:
1. Cook the chicken
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the diced chicken, seasoning lightly with salt and pepper. Cook until the chicken is golden and fully cooked, approximately 5-7 minutes. Remove from the skillet and set aside.
2. Sauté the garlic
In the same skillet, add a little more oil if needed. Add the minced garlic and sauté for about 30 seconds until it becomes fragrant.
3. Scramble the eggs
Move the garlic to one side of the skillet and pour in the beaten eggs. Stir continuously until the eggs are scrambled and just set.
4. Stir-fry the rice
Return the cooked chicken to the skillet along with the chilled rice and soy sauce. Stir-fry the mixture for 3-4 minutes until the rice is heated through and slightly crispy.
5. Add vegetables (optional)
If using, add the frozen peas and carrots, stirring for 1-2 minutes until they are tender.
6. Garnish and serve
Top with chopped green onions and serve hot.
