Italian Lemon Pecorino Chicken
Ingredients:
For the Chicken:
4 boneless, skinless chicken breasts
2 tablespoons olive oil
2 cloves garlic (minced)
Zest of 1 lemon
Juice of 1 lemon
½ cup grated Pecorino Romano cheese
1 teaspoon dried oregano
1 teaspoon dried basil
Salt and pepper to taste
For Garnish:
Chopped fresh parsley
Lemon wedges
Instructions:
Prepare the Chicken:
Begin by preheating your oven to 375°F (190°C).
Dry the chicken breasts with a paper towel and season both sides with salt and pepper.
Sear the Chicken:
In an oven-safe skillet, heat the olive oil over medium heat.
Sear the chicken breasts for 2-3 minutes on each side until they are golden brown. Remove them from the skillet and set aside.
Prepare the Lemon Pecorino Sauce:
In the same skillet, add the minced garlic and sauté for about 1 minute until it becomes fragrant.
Add the lemon juice, lemon zest, oregano, and basil, and let it simmer for 1-2 minutes.
Incorporate half of the grated Pecorino Romano cheese into the sauce, stirring until it starts to melt.
Bake the Chicken:
Place the chicken back into the skillet, spoon the sauce over the top, and sprinkle the remaining Pecorino Romano cheese.
Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken’s internal temperature reaches 165°F (74°C).
Serve:
Garnish with chopped fresh parsley and serve alongside lemon wedges for added brightness.
