Banana bread

Banana Bread:

Ingredients:

– 1/2 cup softened butter
– 1 cup sugar
– 2 large eggs
– 1 very ripe banana, mashed
– 8 ounces crushed pineapple (do not drain)
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– Optional: 1/2 cup chopped nuts or raisins

Directions:

1. Preheat the Oven: Set your oven to 350°F (175°C) and grease a 9×5-inch loaf pan.

2. Prepare Wet Ingredients: In a large bowl, cream the butter and sugar together until the mixture is light and fluffy. Add the eggs one at a time, then mix in the mashed banana and crushed pineapple.

3. Mix Dry Ingredients: In a separate bowl, combine the flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Avoid overmixing. If desired, fold in the nuts or raisins.

4. Bake: Transfer the batter to the prepared loaf pan. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.

5. Cool: Allow the bread to cool in the pan for 10 minutes before moving it to a wire rack to cool completely.
