Potato soup
Baked Potato Soup recipe that you will enjoy!
Ingredients:
– 4 large potatoes, cleaned and diced (or baked, peeled, and chopped for a smoky taste)
– 8 slices of bacon, cooked until crispy and crumbled
– 4 tablespoons unsalted butter
– 2 cloves of garlic, minced
– 1/4 cup yellow onion, finely diced
– 1/4 cup all-purpose flour
– 3 cups chicken broth
– 2 cups milk
– 1 cup heavy cream
– 1 teaspoon salt (or to taste)
– 1/2 teaspoon black pepper
– 1 cup shredded sharp cheddar cheese (plus additional for garnish)
– 1/4 cup sour cream (plus extra for garnish)
– 2 green onions, chopped (for decoration)
Instructions:
1. Cook the Bacon: In a large pot, cook the bacon until crispy. Remove it from the pot and set aside, leaving about 2 tablespoons of the bacon grease.
2. Sauté the Vegetables: Add the butter to the pot with the bacon grease, then sauté the garlic and onion over medium heat until they are fragrant and translucent, approximately 2 minutes.
3. Prepare the Roux: Incorporate the flour and cook for 1-2 minutes to remove the raw flour flavor. Gradually whisk in the chicken broth, followed by the milk and heavy cream, ensuring a smooth consistency.
4. Incorporate the Potatoes: Add the diced or baked potatoes to the mixture. Cook for 15-20 minutes, stirring occasionally, until the potatoes are tender and the soup thickens. Use a potato masher to mash some of the potatoes, leaving some chunks for added texture.
5. Season and Add Cheese: Mix in the salt, pepper, cheddar cheese, and sour cream. Stir until the cheese has melted and the soup is creamy.
6. Serve and Garnish: Pour the soup into bowls and top with crispy bacon, additional shredded cheese, sour cream, and chopped green onions.
