Coconut Pineapple Cake:

Ingredients:

– 1 (15 1/4-ounce) can of crushed pineapple in juice, undrained
– 1 1/2 cups of softened butter or margarine
– 2 cups of granulated sugar
– 4 large eggs
– 3 cups of all-purpose flour
– 1/2 teaspoon of baking soda
– 1/2 teaspoon of salt
– 1 cup of buttermilk
– 2 teaspoons of vanilla extract
– 2 cups of sweetened shredded coconut

Frosting:

– 1 (8-ounce) package of softened cream cheese
– 1/2 cup of softened butter
– 4 cups of powdered sugar
– 1/4 cup of pineapple juice (reserved from the crushed pineapple can)
– 1 teaspoon of vanilla extract
– 1 cup of toasted sweetened shredded coconut, for garnish (optional)

Instructions:

1. Preheat the Oven:
Begin by preheating your oven to 350°F (175°C). Prepare three 9-inch round cake pans by greasing and flouring them or lining them with parchment paper.

2. Prepare the Batter:
In a large mixing bowl, use an electric mixer to beat the softened butter and sugar together until the mixture is light and fluffy, approximately 2-3 minutes. Incorporate the eggs one at a time, ensuring thorough mixing after each addition. In a separate medium bowl, combine the flour, baking soda, and salt. Gradually mix the dry ingredients into the wet mixture, alternating with the buttermilk, starting and finishing with the dry ingredients. Finally, fold in the vanilla extract, crushed pineapple (with juice), and 2 cups of shredded coconut until the mixture is well blended.

3. Bake the Cake:
Evenly distribute the batter among the prepared cake pans. Bake for 25 to 30 minutes, or until a toothpick inserted into the center of the cakes comes out clean. Allow the cakes to cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.

4. Prepare the Frosting:
In a medium bowl, beat the cream cheese and butter together until smooth. Gradually add the powdered sugar while mixing on low speed until the frosting is creamy. Incorporate the reserved pineapple juice and vanilla extract, mixing until the frosting is smooth.
