Air Fryer Egg Bites
Ingredients:
– 4 large eggs
– 1/2 cup cottage cheese
– 1/2 cup shredded cheese (such as cheddar or Monterey Jack)
– 1/4 cup diced cooked bacon, ham, or your preferred vegetables (such as spinach or bell peppers)
– Salt and pepper to taste
– Cooking spray
Instructions:
1. Begin by preheating your air fryer to 350°F (175°C) for approximately 5 minutes.
2. In a blender or food processor, combine the eggs, cottage cheese, shredded cheese, diced bacon or selected vegetables, along with salt and pepper. Blend the mixture until it reaches a smooth and uniform consistency.
3. Lightly coat the wells of your air fryer basket with cooking spray. If available, utilize silicone molds designed for egg bites.
4. Carefully pour the egg mixture into the greased wells or silicone molds, filling them about two-thirds full to allow for expansion during cooking.
5. Insert the filled molds or basket into the preheated air fryer.
6. Cook the egg bites at 350°F (175°C) for approximately 10-12 minutes, or until they are firm and exhibit a slight golden hue on top. Cooking times may vary based on the specific model of your air fryer, so monitor them closely.
7. Once cooked, gently remove the egg bites from the air fryer using tongs or a fork. Allow them to cool for a few minutes before extracting them from the molds if silicone molds were used.
8. Serve the air fryer egg bites warm. They can be enjoyed alone or accompanied by salsa, hot sauce, or your preferred dipping sauce.
