Cheesy Mashed Potato Bites (Air Fryer)
Ingredients:
– 2 cups mashed potatoes (either leftover or freshly prepared)
– 1 cup shredded cheddar cheese (or any cheese of your preference)
– 1/4 cup grated Parmesan cheese
– 1/4 cup finely chopped green onions or chives (optional)
– 1 large egg
– 1/2 cup breadcrumbs (panko is an excellent choice)
– 1/2 teaspoon garlic powder
– Salt and pepper to taste
– Nonstick cooking spray
Instructions:
1. Preheat the Air Fryer: Adjust your air fryer to 375°F (190°C).
2. Prepare the Mixture: In a mixing bowl, blend the mashed potatoes, shredded cheddar cheese, Parmesan, green onions, egg, garlic powder, salt, and pepper until thoroughly combined.
3. Shape the Bites: Take 1-2 tablespoons of the mixture and form small balls or flatten them into patties for a crunchier texture.
4. Coat with Breadcrumbs: Roll each ball or patty in breadcrumbs, ensuring they are completely covered for optimal crispiness.
5. Air Fry: Lightly coat the air fryer basket with nonstick cooking spray. Arrange the potato bites in a single layer, allowing space between them. Lightly spray the tops with cooking spray. Air fry for 10-12 minutes, turning them halfway through, until they are golden brown and crispy.
6. Serve: Enjoy these bites hot with your preferred dipping sauce, such as ranch, sour cream, or marinara.
