Ham and Potato Corn Chowder:
Ingredients:
– 2 tablespoons of butter
– 1 small onion, finely chopped
– 2 cloves of garlic, minced
– 2 cups of diced cooked ham
– 4 medium potatoes, peeled and cubed
– 2 cups of frozen corn (or fresh)
– 4 cups of chicken broth
– 1 cup of heavy cream or half-and-half
– 1/4 cup of all-purpose flour
– 1/2 teaspoon of smoked paprika
– 1/2 teaspoon of thyme
– Salt and pepper to taste
– Optional: shredded cheddar cheese and green onions for garnish
Instructions:
1. Sauté the Aromatics: In a large pot, melt the butter over medium heat. Add the onion and garlic, and sauté until they become tender.
2. Incorporate Ham and Potatoes: Add the diced ham and potatoes to the pot. Cook for 2-3 minutes.
3. Simmer the Mixture: Pour in the chicken broth, and add thyme and paprika. Bring the mixture to a boil, then lower the heat to a simmer. Cover and cook for 15-20 minutes, or until the potatoes are soft.
4. Thicken the Chowder: In a separate bowl, whisk the flour with the heavy cream until it is smooth. Gradually add this mixture to the pot while stirring continuously.
5. Add the Corn: Mix in the corn and allow the chowder to simmer for an additional 5-7 minutes until it reaches the desired thickness. Season with salt and pepper according to your taste.
6. Serve: Spoon the chowder into bowls and, if desired, top with shredded cheese and green onions.
