Potato muffins
Air Fryer Mashed Potato Muffins
Ingredients:
– 2 cups of mashed potatoes (leftovers are ideal)
– 1 large egg
– 1/2 cup of shredded cheese (such as cheddar, mozzarella, or your preferred type)
– 2 tablespoons of chopped green onions or chives (optional)
– Salt and pepper, to taste
– Nonstick cooking spray
– Optional toppings: additional cheese, bacon bits, sour cream, or fresh herbs
Instructions:
1. Prepare the Mixture: In a mixing bowl, combine the mashed potatoes, egg, shredded cheese, green onions or chives, salt, and pepper. Stir until the ingredients are thoroughly mixed.
2. Form the Muffins: Apply nonstick cooking spray to silicone muffin cups. Spoon the mashed potato mixture into each cup, filling them to the brim and pressing down gently to create a firm shape.
3. Air Fry: Arrange the muffin cups in the air fryer basket. Cook at 370°F (190°C) for 10-12 minutes, or until the tops achieve a golden brown and crispy texture.
4. Serve: Carefully take the muffin cups out of the air fryer. Allow them to cool for a few minutes before serving. If desired, add extra cheese, bacon bits, or sour cream as toppings.
