Ingredients
– 3 tablespoons of butter, divided
– 2 large eggs, beaten
– 2 medium carrots, peeled and chopped
– 1 small white onion, chopped
– 1/2 cup of frozen peas
– 3 cloves of garlic, minced
– 4 cups of cooked and chilled rice (preferably day-old)
– 3 green onions, finely sliced
– 3–4 tablespoons of soy sauce, adjusted to taste
– 1/2 teaspoon of toasted sesame oil
– Salt and pepper, to taste
Instructions
1. Prepare the Eggs: In a large skillet or wok, melt 1 tablespoon of butter over medium-high heat. Pour in the beaten eggs and scramble until fully cooked. Remove from the skillet and set aside.
2. Sauté the Vegetables: Add another tablespoon of butter to the skillet. Incorporate the diced carrots, onion, peas, and minced garlic. Sauté for approximately 5 minutes, or until the vegetables become tender.
3. Incorporate the Rice: Raise the heat to high. Add the final tablespoon of butter along with the chilled rice to the skillet. Mix thoroughly and spread the rice evenly across the skillet to allow it to fry slightly. Let it cook undisturbed for about 1-2 minutes to achieve some crispy texture, then stir again.
4. Season and Mix: Return the scrambled eggs to the skillet, adding the soy sauce and sesame oil. Stir well to ensure all ingredients are combined. Adjust seasoning with salt and pepper as desired.
5. Add Garnish: Incorporate the sliced green onions and mix everything together once more.
6. Serve Warm: Relish your homemade fried rice as either a side dish or a main course.
