Beef medallions
Beef Medallions with Garlic Herb Gravy and Baby Potatoes
Ingredients:
For the Beef:
1 lb beef medallions or tenderloin, sliced into thick pieces
Salt and pepper, to taste
1 tablespoon olive oil
1 tablespoon butter
For the Gravy:
1 tablespoon butter
1 small onion, finely chopped
3 cloves garlic, minced
1 cup beef broth
1 teaspoon Worcestershire sauce
1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)
1 tablespoon cornstarch mixed with 1 tablespoon water (optional, for thickening)
For the Potatoes:
1/2 lb baby potatoes, halved
Salt and pepper, to taste
Chopped fresh parsley (for garnish)
Directions:
Prepare the Potatoes: In a pot of salted boiling water, cook the baby potatoes until they are tender, approximately 10-12 minutes. Drain and set aside.
Season and Sear the Beef: Dry the beef medallions with a paper towel and season both sides with salt and pepper. In a large skillet, heat the olive oil and butter over medium-high heat. Add the beef medallions and sear for 3-4 minutes on each side, or until they are browned and cooked to your preferred doneness. Remove the beef from the skillet and set aside.
Prepare the Gravy: In the same skillet, melt 1 tablespoon of butter. Add the chopped onion and sauté for 3-4 minutes until softened. Incorporate the minced garlic and cook for an additional minute. Pour in the beef broth and Worcestershire sauce, then stir in the thyme. Allow the mixture to simmer. If a thicker gravy is desired, add the cornstarch slurry and stir until the gravy thickens, which should take about 2 minutes.
Combine Ingredients: Return the cooked potatoes and beef medallions to the skillet, spooning the gravy over them. Allow them to simmer in the gravy for 1-2 minutes to absorb the flavors.
Serve: Garnish with freshly chopped parsley and serve warm. This comforting dish pairs well with crusty bread or steamed vegetables.
