Sausage Breakfast Muffins Recipe
Ingredients:
– 1 pound breakfast sausage (choose between mild or spicy)
– 6 large eggs
– 1 cup shredded cheese (such as cheddar or mozzarella, based on preference)
– 1 cup milk
– 1 cup all-purpose flour
– 1 teaspoon baking powder
– 1/2 teaspoon salt
– 1/4 teaspoon black pepper
– 1/2 teaspoon garlic powder (optional)
– 1/2 teaspoon onion powder (optional)
– Chopped green onions or bell peppers for additional flavor (optional)
Instructions:
1. Preheat the Oven:
Begin by preheating your oven to 350°F (175°C). Prepare a muffin tin by greasing it or lining it with muffin liners.
2. Cook the Sausage:
In a skillet set over medium heat, cook the breakfast sausage until it is browned and thoroughly cooked. As it cooks, break it into smaller pieces. Once done, drain any excess grease and allow it to cool slightly.
3. Prepare the Muffin Batter:
In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder until the mixture is well blended.
4. Combine Ingredients:
Incorporate the cooked sausage and shredded cheese into the egg mixture. In a separate bowl, mix the flour and baking powder, then gradually add this dry mixture to the sausage and egg blend. Stir gently until just combined, taking care not to overmix.
5. Fill the Muffin Tin:
Evenly distribute the batter among the muffin cups, filling each approximately three-quarters full.
6. Bake:
Place the muffin tin in the preheated oven and bake for about 18-20 minutes, or until the muffins are puffed and a toothpick inserted into the center comes out clean.
7. Cool and Serve:
Allow the muffins to cool in the pan for a few minutes before transferring them to a wire rack. They can be served warm or at room temperature.
