Taco casserole

Taco Casserole that’s easy, delicious, and brings the fun of walking tacos to the dinner table!

Walking Taco Casserole Recipe

Ingredients:

1 lb (450g) ground beef

1 medium onion, chopped

2 cloves garlic, minced

1 packet taco seasoning

1 cup water

1 can (15 oz) black beans, drained and rinsed

1 ½ cups shredded cheddar cheese

1 cup corn, canned and drained or frozen

2 cups crushed tortilla chips (or Fritos for extra crunch)

Toppings: shredded lettuce, diced tomatoes, sour cream, sliced jalapenos, salsa (optional)

Instructions:

1. Preheat Oven: Set your oven to 350°F (175°C).

2. Cook the Beef Mixture:

In a large skillet over medium heat, add the ground beef and cook until browned, breaking it up as it cooks.

Add the chopped onion and garlic to the beef, and cook for another 2-3 minutes until they soften.

Stir in the taco seasoning and water, cooking until everything is well combined and the sauce thickens.

3. Add Beans and Corn:

Add black beans and corn to the skillet, stirring until everything is well mixed and heated through.

4. Layer in Casserole Dish:

Spread half of the crushed tortilla chips on the bottom of a 9×13-inch (23×33 cm) casserole dish.

Spoon the beef mixture over the chips, then sprinkle 1 cup of shredded cheese on top.

5. Add Topping Layer:

Add the remaining crushed chips over the cheese and finish with the remaining shredded cheese on top.

6. Bake: Bake for 15-20 minutes, until the cheese is melted and bubbly.

7. Serve: Remove from the oven and let it cool slightly. Top with shredded lettuce, diced tomatoes, sour cream, sliced jalapenos, and salsa if desired.
