French Onion Chicken Bake

Ingredients:

4 boneless, skinless chicken breasts

Salt and pepper, to taste

2 cups caramelized onions (about 4 large onions)

1 1/2 cups shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup beef broth

1 tablespoon balsamic vinegar

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Instructions:

1. Caramelize the Onions:

Heat olive oil in a large skillet over medium heat. Add sliced onions and cook, stirring occasionally, for 20–25 minutes until they’re golden and caramelized. Add balsamic vinegar and cook for another 2 minutes. Remove from heat.

2. Prepare Chicken:

Preheat your oven to 375°F (190°C). Season the chicken breasts with salt and pepper.

In the same skillet, add the chicken and sear for 2–3 minutes on each side until golden. Remove from skillet.

3. Assemble the Bake:

In an oven-safe baking dish, pour beef broth and add thyme. Place the seared chicken breasts on top.

Spread the caramelized onions over each chicken breast, then sprinkle mozzarella and Parmesan cheese evenly over the top.

4. Bake:

Bake in the preheated oven for 25–30 minutes until the chicken is cooked through (internal temperature of 165°F) and the cheese is melted and bubbly.

5. Garnish and Serve:

Sprinkle fresh parsley over the top and serve warm. Enjoy!
