Potato soup
Kielbasa Potato Soup
Ingredients:
1 lb kielbasa, sliced
4 medium potatoes, peeled and diced
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
4 cups chicken broth
1 cup milk (or heavy cream for a richer flavor)
1 tbsp olive oil or butter
Salt and pepper to taste
Optional: 1 tsp smoked paprika, fresh parsley for garnish
Instructions:
1. Sauté the Kielbasa: In a large pot, heat the olive oil or butter over medium heat. Add the sliced kielbasa and cook until browned on both sides, about 5 minutes. Remove kielbasa and set aside.
2. Cook the Vegetables: In the same pot, add the onion, carrots, celery, and garlic. Cook until the onion is translucent, about 4–5 minutes.
3. Add Potatoes and Broth: Add the diced potatoes and chicken broth. Bring the soup to a boil, then reduce the heat to a simmer. Let it cook until the potatoes are tender, about 15 minutes.
4. Add Milk and Kielbasa: Once potatoes are tender, stir in the milk (or heavy cream) and return the kielbasa to the pot. Season with salt, pepper, and smoked paprika if desired.
5. Simmer: Let the soup simmer for another 5–10 minutes to allow flavors to meld.
6. Serve: Garnish with fresh parsley and serve hot with crusty bread.
