Crispy potato
crispy mashed potato patties
Ingredients:
2 cups mashed potatoes (preferably cold and well-seasoned)
1/2 cup grated cheese (cheddar or mozzarella works well)
1 egg
1/4 cup flour (plus more for coating)
1/4 cup chopped fresh parsley or chives
Salt and pepper to taste
Oil or butter for frying
Instructions:
1. Mix Ingredients: In a mixing bowl, combine the mashed potatoes, grated cheese, egg, flour, parsley (or chives), salt, and pepper. Mix well until all ingredients are combined.
2. Form Patties: Take a small portion of the mixture and shape it into a patty. Lightly coat each patty with a bit of flour to help them crisp up.
3. Heat Pan: Heat a skillet over medium heat and add a few tablespoons of oil or butter.
4. Cook Patties: Once the oil is hot, place the patties in the skillet and cook for about 3-4 minutes on each side, or until golden brown and crispy.
5. Serve: Garnish with more parsley or chives if desired. Serve warm as a side dish or snack.
These make for a delicious way to use up leftover mashed potatoes!
