Iowa Sweet Corn Fritters
Ingredients:
2 cups fresh sweet corn kernels (or frozen, thawed)
1/2 cup all-purpose flour
1/4 cup cornmeal
1 tsp baking powder
1/2 tsp salt
1/4 tsp black pepper
1/4 cup milk
1 egg, beaten
1/4 cup chopped green onions (optional)
Oil for frying
Instructions:
1. In a mixing bowl, combine flour, cornmeal, baking powder, salt, and pepper.
2. Add the corn kernels, milk, egg, and green onions. Stir until just combined.
3. Heat about 1/4 inch of oil in a skillet over medium-high heat.
4. Drop spoonfuls of batter into the hot oil, pressing them down slightly. Fry until golden brown on each side, about 2-3 minutes per side.
5. Drain on paper towels. Serve warm with sour cream, honey butter, or a drizzle of hot sauce!
These fritters make a great snack or side dish and are packed with Iowa corn flavor. Enjoy!
