Lasagna
Lasagna Soup recipe that’s packed with flavor and easier to make than traditional lasagna. Enjoy the comfort of lasagna in a bowl!
Ingredients:
1 lb ground beef or Italian sausage
1 small onion, diced
3 cloves garlic, minced
4 cups chicken or beef broth
1 can (28 oz) crushed tomatoes
1 can (15 oz) tomato sauce
2 tsp Italian seasoning
1 tsp dried basil
Salt and pepper to taste
8-10 lasagna noodles, broken into pieces
1 cup ricotta cheese
1 ½ cups shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil or parsley, for garnish (optional)
Instructions:
1. Cook the Meat: In a large pot, cook the ground beef or sausage over medium heat until browned. Drain excess fat if needed. Add diced onion and minced garlic, cooking until softened.
2. Build the Broth: Add broth, crushed tomatoes, and tomato sauce. Stir in Italian seasoning, basil, salt, and pepper. Bring to a simmer and cook for 15 minutes.
3. Add Noodles: Add lasagna noodles to the soup and let them cook for about 10-12 minutes, or until tender.
4. Cheese Mixture: In a small bowl, mix together ricotta, mozzarella, and Parmesan.
5. Serve: Ladle soup into bowls, and add a scoop of the cheese mixture to each bowl. Garnish with fresh basil or parsley if desired.
