Pecan Cheesecake Pie:

Ingredients:

For the Crust:

1 store-bought or homemade pie crust (9-inch)

For the Cheesecake Layer:

8 oz cream cheese, softened

1/3 cup granulated sugar

1 large egg

1/2 tsp vanilla extract

For the Pecan Pie Layer:

3 large eggs

1 cup light corn syrup

1/2 cup granulated sugar

1/4 cup unsalted butter, melted

1 tsp vanilla extract

1 1/2 cups pecans (halves or chopped)

Instructions:

1. Preheat oven to 350°F (175°C). Place the pie crust in a 9-inch pie pan, crimping the edges if desired.

2. Prepare the Cheesecake Layer:

In a medium bowl, beat the softened cream cheese with 1/3 cup of sugar until smooth.

Add the egg and vanilla, mixing until fully combined.

Spread this mixture evenly on the bottom of the pie crust.

3. Prepare the Pecan Pie Layer:

In a separate bowl, whisk together the eggs, corn syrup, 1/2 cup sugar, melted butter, and vanilla extract until smooth.

Stir in the pecans.

Carefully pour this pecan mixture over the cheesecake layer.

4. Bake the Pie:

Bake for 50-60 minutes, or until the center is set and the top is golden brown.

If the edges of the crust start to brown too much, cover them with aluminum foil to prevent burning.

5. Cool and Serve:

Allow the pie to cool completely before slicing to give the cheesecake layer time to set.

Serve as is, or with whipped cream or vanilla ice cream.
