Amish Cinnamon Bread
Ingredients:
For the bread:
1 cup butter (softened)
2 cups sugar
2 large eggs
2 cups buttermilk (or 2 cups milk + 2 tablespoons vinegar or lemon juice)
4 cups all-purpose flour
2 teaspoons baking soda
For the cinnamon-sugar mixture:
2/3 cup sugar
2 teaspoons cinnamon
Instructions:
1. Preheat the oven to 350°F (175°C). Grease two 9×5-inch loaf pans.
2. Make the batter:
In a large bowl, cream together the butter and sugar until smooth.
Add the eggs one at a time, beating well after each addition.
Stir in the buttermilk and mix until combined.
In a separate bowl, whisk together the flour and baking soda. Add the dry ingredients to the wet mixture and stir until just combined.
3. Cinnamon-Sugar Mixture:
In a small bowl, mix together the sugar and cinnamon.
4. Layer the batter:
Spread half of the batter into the prepared loaf pans. Sprinkle 3/4 of the cinnamon-sugar mixture over the batter.
Spread the remaining batter evenly over the top. Sprinkle the rest of the cinnamon-sugar mixture over the top and swirl with a knife for a marbled effect.
5. Bake:
Bake for 45-55 minutes, or until a toothpick inserted into the center of the loaves comes out clean.
Cool in the pan for about 20 minutes before transferring to a wire rack to cool completely.
