Ingredients:
1 lb ground beef (or ground turkey)
1 onion, chopped
1 green bell pepper, diced
1 red bell pepper, diced
3 garlic cloves, minced
1 can (14.5 oz) diced tomatoes (with juice)
1 can (8 oz) tomato sauce
1 cup uncooked rice
2 cups beef broth (or chicken broth)
1 ½ cups shredded cheese (cheddar, mozzarella, or a blend)
1 tsp Italian seasoning
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions:
1. Preheat the oven to 350°F (175°C).
2. Brown the meat: In a large skillet, cook ground beef or turkey over medium heat until no longer pink. Drain excess fat.
3. Cook vegetables: Add chopped onion, diced green and red bell peppers, and garlic to the skillet. Cook for 5-7 minutes, until veggies are softened.
4. Add seasonings: Stir in diced tomatoes, tomato sauce, rice, broth, Italian seasoning, salt, and pepper. Bring the mixture to a simmer.
5. Bake: Transfer everything to a greased 9×13 inch baking dish. Cover tightly with foil and bake for 45 minutes, or until rice is cooked through.
6. Add cheese: Remove foil, sprinkle the casserole with shredded cheese, and return to the oven for 5-10 minutes, until the cheese is melted and bubbly.
7. Serve: Garnish with fresh parsley if desired, and enjoy!
