Slow Cooker Cheddar Corn with Bacon recipe, perfect for a side dish that’s creamy, cheesy, and packed with flavor.
Ingredients:
4 cups frozen corn kernels (or fresh if you have them)
8 slices bacon, cooked and crumbled
1 cup shredded sharp cheddar cheese
½ cup cream cheese, softened
1 cup heavy cream
¼ cup butter, melted
2 tablespoons sugar
1 teaspoon garlic powder
Salt and pepper to taste
2 green onions, sliced (optional for garnish)
Instructions:
1. Prepare the Bacon:
Cook the bacon in a skillet until crispy. Drain on paper towels, crumble, and set aside.
2. Combine Ingredients:
In the slow cooker, add the corn, cream cheese, heavy cream, melted butter, sugar, garlic powder, salt, and pepper.
Stir to combine all the ingredients well.
3. Slow Cook:
Cover the slow cooker and cook on low for 3-4 hours or on high for 2 hours, until the mixture is warm and creamy.
4. Add Cheese and Bacon:
About 30 minutes before serving, stir in the shredded cheddar cheese and most of the crumbled bacon (reserve some for garnish).
Continue cooking until the cheese is fully melted.
5. Serve:
Once ready, stir everything one last time, and top with the remaining crumbled bacon and sliced green onions for garnish.
