Candy
Oklahoma Nut Candy recipe, often enjoyed as a traditional holiday treat:
Ingredients:
2 cups sugar
1 cup whole milk
1 tablespoon butter
1 teaspoon vanilla extract
1/8 teaspoon salt
2 1/2 cups chopped pecans or walnuts
2 cups marshmallows (miniature)
Instructions:
1. Prepare a Baking Dish: Line an 8×8 inch pan with wax paper or parchment paper, and lightly grease it.
2. Cook the Sugar Mixture: In a medium saucepan, combine the sugar, milk, butter, and salt. Bring it to a boil over medium heat, stirring frequently. Cook until it reaches a soft-ball stage (around 235°F / 112°C on a candy thermometer). This usually takes about 10-15 minutes.
3. Add Marshmallows & Nuts: Remove from heat and quickly stir in the marshmallows, vanilla, and chopped nuts. Continue stirring until the marshmallows are melted and everything is well combined.
4. Set the Candy: Pour the mixture into the prepared dish. Spread it out evenly with a spatula. Let it cool for about 1-2 hours at room temperature, or until firm.
5. Cut into Squares: Once set, lift the candy out of the pan using the wax paper and cut it into small squares.
