Vegetable soup

Vegetable Beef Soup recipe:

Ingredients:

1 lb (450g) beef stew meat, cut into bite-sized pieces

2 tbsp olive oil

1 onion, chopped

2 cloves garlic, minced

3 carrots, sliced

3 celery stalks, sliced

2 potatoes, diced

1 cup green beans, trimmed and cut into 1-inch pieces

1 cup corn kernels (fresh or frozen)

1 cup peas (fresh or frozen)

1 can (14.5 oz) diced tomatoes

6 cups beef broth

2 bay leaves

1 tsp dried thyme

1 tsp dried basil

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions:

1. Brown the Beef:

In a large pot, heat olive oil over medium heat.

Add beef and brown on all sides. Remove the beef and set it aside.

2. Sauté the Vegetables:

In the same pot, add onions and garlic. Sauté for 3-4 minutes until soft.

Add carrots and celery, cooking for another 4-5 minutes.

3. Add Remaining Ingredients:

Return the beef to the pot.

Add potatoes, green beans, corn, peas, diced tomatoes, and beef broth.

Stir in thyme, basil, and bay leaves.

Season with salt and pepper to taste.

4. Simmer:

Bring to a boil, then reduce heat to low and simmer uncovered for about 1 to 1.5 hours, or until the beef is tender and the vegetables are cooked through.

5. Serve:

Remove the bay leaves and discard.

Garnish with fresh parsley if desired.

Serve hot with crusty bread.
