Oklahoma Nut Candy
Ingredients:
2 cups sugar
1 cup evaporated milk
½ cup butter (1 stick)
1 tsp vanilla extract
3 cups miniature marshmallows
2 cups mixed nuts (pecans, walnuts, or your choice)
1 cup shredded coconut (optional)
1 ½ cups peanut butter
Instructions:
1. Prepare the pan:
Grease or line an 8×8-inch baking pan with parchment paper.
2. Cook the candy mixture:
In a large saucepan, combine sugar, evaporated milk, and butter.
Bring the mixture to a boil over medium heat, stirring constantly.
Once it begins to boil, reduce the heat slightly and continue to cook for 5-7 minutes, stirring frequently, until it thickens.
3. Add marshmallows and peanut butter:
Remove the saucepan from heat and immediately stir in the marshmallows and peanut butter.
Stir until the marshmallows are melted and the mixture is smooth.
4. Add nuts and coconut:
Stir in the mixed nuts and coconut (if using) until well combined.
5. Set the candy:
Pour the candy mixture into the prepared baking pan, spreading it evenly.
Allow the candy to cool at room temperature until firm, about 2-3 hours. You can also refrigerate it to speed up the process.
6. Cut and serve:
Once set, cut the candy into squares or rectangles and serve.
This candy is chewy, nutty, and perfect for sharing during holidays or special occasions!
