garlic parmesan roasted potatoes

Ingredients

1.5 lbs baby potatoes (or regular potatoes, cut into chunks)

3 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon paprika

Salt and pepper to taste

½ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions

1. Preheat Oven: Preheat your oven to 425°F (220°C).

2. Prepare Potatoes: Wash and dry the potatoes. If using larger potatoes, cut them into bite-sized pieces.

3. Mix Ingredients: In a large bowl, combine olive oil, minced garlic, oregano, paprika, salt, and pepper. Add the potatoes and toss until evenly coated.

4. Roast: Spread the potatoes in a single layer on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, or until golden brown and tender, flipping halfway through.

5. Add Cheese: In the last 5 minutes of roasting, sprinkle the grated Parmesan over the potatoes and return to the oven until the cheese is melted and bubbly.

6. Garnish and Serve: Remove from the oven, garnish with fresh parsley, and serve hot.
