Beef Stew

**Ingredients:**
– 2 lbs (900 g) beef chuck, cut into 1-inch cubes
– 2 tablespoons vegetable oil
– 1 large onion, chopped
– 3 cloves garlic, minced
– 4 carrots, peeled and sliced
– 3 potatoes, peeled and cubed
– 1 cup (150 g) frozen peas
– 1 cup (240 ml) beef broth
– 1 cup (240 ml) red wine (optional)
– 2 tablespoons tomato paste
– 1 tablespoon Worcestershire sauce
– 2 teaspoons dried thyme
– 2 bay leaves
– Salt and black pepper, to taste
– 2 tablespoons all-purpose flour (optional, for thickening)

**Instructions:**

1. **Prepare the Beef:**
– Heat the vegetable oil in a large pot or Dutch oven over medium-high heat.
– Add the beef cubes in batches, browning on all sides. Remove and set aside.

2. **Cook the Vegetables:**
– In the same pot, add the onion and garlic. Cook until softened, about 5 minutes.
– Stir in the tomato paste and cook for another minute.

3. **Combine Ingredients:**
– Return the beef to the pot. Add the carrots, potatoes, beef broth, red wine (if using), Worcestershire sauce, thyme, and bay leaves.
– Bring to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef and vegetables are tender.

4. **Thicken the Stew (Optional):**
– If you prefer a thicker stew, mix 2 tablespoons of flour with a little water to form a slurry. Stir into the stew and cook for an additional 10 minutes.

5. **Add Peas:**
– Stir in the frozen peas during the last 10 minutes of cooking. Adjust seasoning with salt and pepper as needed.

**Instructions:**

1. **Cook the Potatoes:**
– Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.

2. **Mash the Potatoes:**
– Drain the potatoes and return them to the pot. Add the butter and milk.
– Mash until smooth and creamy. Season with salt and pepper.
