Classic Pepper Steak

Ingredients:
– 1 1/2 pounds beef sirloin, thinly sliced
– 2 tablespoons vegetable oil
– 2 bell peppers, sliced
– 1 onion, sliced
– 2 cloves garlic, minced
– 1/4 cup soy sauce
– 1 tablespoon cornstarch
– 1/2 cup beef broth
– 1 tablespoon sugar
– 1 teaspoon ground ginger
– Salt and pepper to taste

Directions:
1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat. Add the beef slices and cook until browned on both sides. Remove beef from skillet and set aside.
2. In the same skillet, add the remaining oil along with the bell peppers and onion. Cook until vegetables are just tender, about 4 minutes.
3. Add the garlic and cook for an additional minute.
4. In a small bowl, whisk together the soy sauce, cornstarch, beef broth, sugar, and ground ginger until smooth. Pour this mixture into the skillet with the vegetables.
5. Return the beef to the skillet. Stir to combine all the ingredients well. Cook until the sauce has thickened and the beef is cooked through, about 3 minutes.
6. Season with salt and pepper to taste.
