Homemade Peach Cobbler Recipe

Ingredients:
– 5 cups of fresh or canned peaches (make sure to drain if using canned)
– 1 cup of granulated sugar
– 1/2 cup of brown sugar
– 1 teaspoon of cinnamon
– 1/4 teaspoon of nutmeg
– 1 teaspoon of vanilla extract
– 1 tablespoon of lemon juice
– 1 tablespoon of cornstarch (optional, for thickening)

For the batter:
– 1 cup of all-purpose flour
– 1 cup of granulated sugar
– 1 tablespoon of baking powder
– 1/4 teaspoon of salt
– 1 cup of milk
– 1/2 cup of unsalted butter (melted)

Instructions:
1. Preheat your oven to 375°F (190°C).
2. In a saucepan, mix together the peaches, both sugars, cinnamon, nutmeg, vanilla, lemon juice, and cornstarch. Cook this mixture over medium heat until it starts to bubble and thicken, which should take about 5 minutes.
3. Pour the melted butter into a 9×13-inch baking dish.
4. In a separate bowl, combine the flour, sugar, baking powder, salt, and milk until the mixture is smooth.
5. Pour the batter over the melted butter without stirring it.
6. Spoon the peach mixture evenly on top of the batter, again without stirring. The batter will rise around the peaches while baking.
7. Bake for 40-45 minutes or until the top is golden brown.
8. Allow it to cool for a bit before serving warm, ideally with some vanilla ice cream or whipped cream.
