Homemade Salsa:
Ingredients:
– 1 can (28 oz) whole tomatoes with their juice
– 2 cans (10 oz each) Rotel diced tomatoes and green chilies
– 1/4 cup finely chopped onion
– 1 clove garlic, minced
– 1 whole jalapeño, quartered and thinly sliced (remove seeds for milder flavor)
– 1/4 teaspoon sugar
– 1/2 teaspoon salt
– 1/4 teaspoon ground cumin
– 1/2 cup fresh cilantro, chopped
– Juice of 1 lime
Instructions:
Combine the whole tomatoes with juice, Rotel, onion, garlic, jalapeño, sugar, salt, cumin, cilantro, and lime juice in a blender or food processor. Blend until you achieve your preferred texture (chunky or smooth). Taste and modify the seasoning as necessary. Transfer the mixture to a bowl, cover it, and refrigerate for at least one hour to allow the flavors to develop. Serve with tortilla chips and enjoy!
