Crockpot French Onion Meatloaf

Crockpot French Onion Meatloaf Topped with Swiss Cheese
Ingredients:
2 pounds ground beef
1 cup breadcrumbs
½ cup grated Parmesan cheese
1 packet (1 oz) onion soup mix
½ cup milk
2 beaten eggs
1 teaspoon Worcestershire sauce
½ teaspoon garlic powder
½ teaspoon black pepper
1 tablespoon ketchup
1 large onion, thinly sliced
1 (10.5 oz) can French onion soup
6 slices Swiss cheese
Instructions:
1. Prepare the Meatloaf Mixture
In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, onion soup mix, milk, beaten eggs, Worcestershire sauce, garlic powder, black pepper, and ketchup. Mix gently until just combined, taking care not to overmix.
2. Shape & Cook
Form the mixture into a loaf and place it in the crockpot. Arrange the sliced onions around and on top of the meatloaf. Pour the French onion soup over the meatloaf.
3. Slow Cook
Cover the crockpot and cook on low for 6-7 hours or on high for 3-4 hours, until the meatloaf reaches an internal temperature of 160°F.
4. Melt the Cheese
In the final 15 minutes of cooking, lay the Swiss cheese slices over the meatloaf. Cover to allow the cheese to melt.
5. Serve & Enjoy
Allow the meatloaf to rest for about 5 minutes before slicing. Serve with a spoonful of the onion gravy over each slice for added flavor.
