Slow-Cooked Brisket with Balsamic Onion Sauce

– 4 lbs beef brisket
– 1 tablespoon olive oil
– 3 large onions, thinly sliced
– 6 cloves garlic, minced
– ½ teaspoon salt
– ½ teaspoon freshly ground black pepper
– ⅔ cup balsamic vinegar
– 1 cup beef stock
– 1½ teaspoons dried thyme
– 1½ teaspoons dried rosemary
– 1 tablespoon honey

1. **Sear the Brisket:**
– In a large skillet, heat the olive oil over medium-high heat.
– Season the brisket with salt and black pepper.
– Sear the brisket in the hot oil until it is browned on all sides, about 3–4 minutes per side.
– Move the seared brisket to the slow cooker.

2. **Prepare the Balsamic Onion Sauce:**
– In the same skillet, add the sliced onions and minced garlic.
– Cook until the onions are soft and caramelized, approximately 5 minutes.
– Mix in the balsamic vinegar, beef stock, dried thyme, and dried rosemary.
– Allow the mixture to simmer, scraping any browned bits from the skillet.

3. **Slow Cook:**
– Pour the balsamic onion sauce over the brisket in the slow cooker.
– Cover and cook on low for 8–10 hours, or until the brisket is tender.

4. **Finish the Sauce:**
– After cooking, remove the brisket from the slow cooker and set it aside.
– Transfer the onion mixture to a saucepan over medium heat.
– Stir in the honey and let the sauce simmer until it reaches your desired thickness.
– Adjust the seasoning with additional salt and pepper if necessary.

5. **Serve:**
– Slice the brisket against the grain into ½-inch thick pieces.
– Serve the sliced brisket topped with the balsamic onion sauce.
