Savory Meatloaf with Caramelized Onion Gravy 🧅🍽️

Ingredients

For the Meatloaf:
– 1 ½ pounds ground beef (80/20 blend) 🥩
– 1 cup breadcrumbs (Panko or regular) 🍞
– ½ cup milk 🥛
– 1 large egg 🥚
– 1 small onion, finely chopped 🧅
– 2 cloves garlic, minced 🧄
– 2 tablespoons ketchup 🍅
– 1 tablespoon Worcestershire sauce
– 1 teaspoon salt 🧂
– ½ teaspoon black pepper
– ½ teaspoon dried thyme
– ½ teaspoon smoked paprika

For the Caramelized Onion Gravy:
– 2 large onions, thinly sliced 🧅
– 2 tablespoons butter 🧈
– 1 tablespoon olive oil
– 2 cups beef broth 🥣
– 1 tablespoon Worcestershire sauce
– 1 teaspoon soy sauce
– 1 tablespoon all-purpose flour
– Salt & pepper to taste

Instructions

1️⃣ Prepare the Meatloaf
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan. In a large mixing bowl, combine the ground beef, breadcrumbs, milk, egg, chopped onion, minced garlic, ketchup, Worcestershire sauce, salt, pepper, thyme, and smoked paprika. Mix until just combined, being careful not to overmix. Form the mixture into a loaf shape and place it in the prepared loaf pan or on the baking sheet. Bake for 50-60 minutes, or until the internal temperature reaches 160°F (71°C). Allow to rest for 10 minutes before slicing.

2️⃣ Prepare the Caramelized Onion Gravy
While the meatloaf is baking, heat the butter and olive oil in a skillet over medium heat. Add the sliced onions and cook, stirring occasionally, for 15-20 minutes until they are golden brown. Sprinkle in the flour, stir, and cook for an additional minute. Gradually add the beef broth, Worcestershire sauce, and soy sauce. Stir and let simmer for 5-7 minutes until the gravy thickens. Season with salt and pepper to taste.

3️⃣ Serve & Enjoy!
Slice the meatloaf and generously pour the warm caramelized onion gravy over the top. Pair with mashed potatoes or roasted vegetables for a satisfying meal.
