Sausage Muffins

Sausage Muffins using Bisquick—ideal for a quick breakfast or snack!
Ingredients: 1 lb breakfast sausage (mild or spicy) 2 cups Bisquick baking mix 1 cup shredded cheddar cheese ½ cup milk 2 large eggs Instructions: Begin by preheating the oven to 375°F. Prepare a 12-cup muffin tin by greasing it or lining it with paper liners. In a skillet over medium heat, cook the sausage, breaking it apart as it browns. Once cooked, drain any excess grease and allow it to cool slightly. In a large mixing bowl, combine the Bisquick, shredded cheese, and the cooked sausage. In another bowl, whisk the eggs and milk together, then add this mixture to the sausage blend. Mix until just combined. Fill each muffin cup about ¾ full with the batter. Bake for 18–22 minutes, or until they are golden brown and a toothpick inserted in the center comes out clean. Allow to cool for a few minutes before serving. Serve warm!
