Air-Fried Potato Cakes!

Ingredients: 2 cups of mashed potatoes (leftovers work perfectly) 1 egg ¼ cup all-purpose flour (or breadcrumbs for added crunch) ½ cup shredded cheese (cheddar, mozzarella, or your preferred type) 2 tablespoons chopped green onions (optional) ½ teaspoon garlic powder ½ teaspoon onion powder Salt and pepper to taste Cooking spray or a light coating of oil Instructions: Preheat the Air Fryer – Set the temperature to 375°F (190°C). Combine the Ingredients – In a mixing bowl, blend the mashed potatoes, egg, flour, cheese, green onions, garlic powder, onion powder, salt, and pepper until well mixed. Shape the Patties – Take a portion of the mixture and shape it into small, round cakes (approximately ½-inch thick). Prepare for Air Frying – Lightly spray or brush each potato cake with oil to enhance crispiness. Air Fry – Arrange the cakes in a single layer in the air fryer basket. Cook for 8-10 minutes, flipping them halfway through, until they are golden and crispy. Serve & Enjoy – These are best enjoyed warm with sour cream, ranch dressing, or your favorite dipping sauce!
